Fondant icing is used mainly for confectionaries and to decorate cakes. It is available as rolled, sculpted and poured consistencies, the most common for home users being rolled. When working with fondant icing, it’s best to use the old fashioned rolling pin and elbow grease! Work quickly with small amounts at a time – protecting the remaining icing in a plastic bag as it dries out quickly.
